ESTABLISHMENT OF QUALITY INDICATORS OF PECTIN OF CRATAEGUS FLAVA L. FRUITS The purpose of this work to study the pectin of the fruits of the yellow hawthorn
Crataegus flava L. and the
establishment of its basic quality indicators. To determine the quantitative content of functional groups, a titrimetric
method was used. For the first time, the physical and chemical indicators of obtained pectin were established in
comparison with the regulated indicators for industrial pectin: color, smell, taste, content of fibrous fraction, degree
of esterification (39%). For the first time, the percentage of free carboxyl, methoxylated, methoxyl and total
carboxyl groups in pectin has been established. The content of functional groups in substance was: free carboxyl
groups 9.15%, methoxylated groups 4.48%, the total number of carboxyl groups 13.63%, methoxyl groups 4.25%. It
has been established that the pectin of
Crataegus flava L. is medium esterified, a low content of methoxyl groups
and a high free carboxyl group indicates a low gelling ability and high detoxifying properties of the substance,
which can be used in further for the creation of medicines.
