Results
As was mentioned in Baktybayeva's MSc thesis (2016), according to the FAO (Food and
Agriculture Organization of the United Nations), the global production of honey in 2013 was
around 1.67 million tonnes. In the Figure 1 demonstrated slowly increasing situation of the
worldwide honey production between 2003 and 2013.

On the next figure (Figure 2) shown the top ten worldwide honey producers between 2004
and 2014 (FAO, 2017).

Official data about production value of honey in Kazakhstan, which was taken from the FAO
demonstrated in the following figure (2017).

Quality assessments of honey are mainly indicated by sensorial, microbiological and
physico-chemical parameters (Bogdanov et al., 2004). Analysis of honey physico-chemical
properties include: free acidity, electrical conductivity, hydroxymethylfurfural (HMF) content,

reducing and non-reducing sugars, diastase activity, ash and moisture content (Khalil et al.,
2012).
Analyzing of honey properties in Kazakhstan includes analyzing of pollen and moisture
content, reducing sugars and sucrose, diastase number, free acidity and pH (Interstate council of
standardization, metrology and certification, 2001). But there is no information about electrical
conductivity, which is very important parameter for defining the physical properties of honey
(Baktybayeva, 2016).
